I hear people talk about how good chili is in the fall/winter. I happen to like chili anytime off the year. I used to love to get chili at the Petro fuel islands. But after doing some research i found out how bad their chili was for you.
Research
After finding out about how bad commercial chili was for you I decided to do research for keto chili. I found several different chili recipes but none of them seemed suited for cooking on the truck. So I put the best (and least) ingredients together from the recipes.
Violates 1 pot rule
Making my chili violates my one pot rule for the truck. I try to use the least of amount of dishes for cooking/eating that I can. If you would like to avoid cooking the hamburger you can buy canned/cooked hamburger at Wal-Mart.
Ingredients
- 1 pound 73/27 hamburger
- 1/2 onion
- 1 jalapeno
- 10 ouncecan Ro-Tel Diced Tomatoes with Habaneros
- 6 oz can tomatoe paste
- 1 tbsp Chili powder
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1 Tbsp cummin
- OPTIONAL ÷ cayenne pepper
- OPTIONAL- cook and chop up some bacon. Put bacon grease and bacon into the mix
Method
Step 1
Cut up the onion and jalapeno and set aside
Step 2
Heat an electric skillet and add some butter. I like Coconut oil and Butter ghee.
Step 3
Add onions and jalapeno to the skillet and cook till onions are starting to look clear.
Step 4
Added the hamburger and spices and cook till hamburger is about 3/4 the way done.
Step 5
Add all the ingredients to the crock pot and let cook on high for about 2 hours.
