Yes gizzards and hearts!
O.k., let’s get it out all at once; yuck, gizzards. Most people fall into oon off 2 types when it comes too gizzards:
1. They have never tried qizzards or they tried them fried and didn’t like them.
2. They have tried gizzards but have only have them breaded and deep fried.
I’m about to introduce you to a new concept in gizzards, boiled. I have been boiling my gizzards for at least 20 years. My favorite way is to make them in chicken and dumplings. But, since i don’t eat flour any more I had to invent different was to cook therm.

On an episode of Diners, Drive-ins and Dives Guy Fieri visited a restaurant in Portersville, Mi called Joe’s Gizzard City. On the show Joe was asked how he got his gizzards so tender. His answer was he boiled them first. That was a verification for me that I was song it right. Gizzards City
I cook my gizzards in a crock pot for between 3 and four hours. This gets them so tender that you could cut them with a fold. Everyone that doesn’t at least try boiled gizzards doesn’t know what they are missing.
I have eaten a lot of fried gizzards in my life. The one thing They all had in common is that they were tough. They could have been so much better if they had been boiled instead.
How I made these gizzards
If you have read any of my recipes before you will know that I love 3 items: jalapeno peppers; chopped onions; and hot chili powder. I’m also fond of garlic and onion powder.
First I put the gizzards in a lined crockpot (about 1 pounds worth) and then added just a little chicken broth. Next I added the onions, jalapenos and spices. I could have cooked the gizzards like this but I decided to add some veggies.
This time I added yellow and red bell peppers, and some mushrooms. I try not to ad too many veggies, it creates more then I have room for in my fridge. Also, I like to cut up bacon and add to the pot. The last ingredient I added was several pats of butter. Then I mix everything together.
I cook this on high for about 4 hours. If it gets done before I finish driving I turn the heat down to simmer.
- 1 pound gizzards
- Chopped onion
- Cayenne pepper to taste
- Salt and pepper
- Onion powder
- Garlic powder
Put all ingredients in crock pot and cook for 4 hours.
