Pork Rind Tortillas

I tried making this recipe a couple weeks ago. I was not satisfied with the results. Being on the truck I had to cut down on the recipe ingredients. When I cooked the tortillas they came out a little thick. To say the least I was a little disappointed.

Second try

So I finally decided to try the recipe again. But instead of following it to the letter, I changed it up a little.

The recipe is very simple in the ingredients that it uses. I normally try to keep all the recipes between 3 and 5 ingredients. This is the basic recipe:

Pulverize 2 to 4 ounces of pork rinds I a food processor on in the Ninja food processor. I just use the plain flavor but you can use the flavored rinds. Just remember to count the carbs.

If you use 2 ounces of rinds add 3 eggs to the mixture. 4 ounces needs 6 eggs.

The original recipe says to add 1 tbsp. of baking soda. I used just a pinch, but I haven’t figured out if this is needed or not. The first time I made this I didn’t use any baking soda.

Add 1 ounce of softened cream cheese for every ounce of pork rinds. Finally add about 1/2 cup of water. you may have to add more to get the thickness you want. Mix the ingredients with the food processor until they are creamy.

Added ingredients

You can cook the tortillas the way they are, but I like to spice up my foods. So I added about 1 tbsp full of cinnamon. Other ingredients you can add include Cheyenne pepper, chili powder, garlic, cumin, etc. I even added cheese to mine before cooking. Just use your imagination.

The original recipe calls for using a spray to coat you skillet before cooking. I don’t like to use the sprays so I used butter. I let the electric skillet heat up to about 250 degrees and then I rubbed the butter on the bottom.

Next I took a large spoon and dipped the mix into the skillet. I used 2 spoonsful for each tortilla. Use the spoon to spread the mixture out. I cooked them on each side for about 1.5 to 2 minutes each.

Try experimenting a little with this recipe. I hade to add more water to make mine thin enough to be able to fold them. This recipe made 4 tortillas. I just ate mine with a little added butter.
