I Love Avocado and Egg Salad

I was wondering what to have for dinner tonight.  I thought about regular egg salad but I didn’t  have any mayo.  And I didn’t want to make any.  I did have hard boiled eggs and an avocado that I needed to use.

But I wasn’t in the mood to have the same meal I had the night before.  The ingredients might have been the same,  but I wanted to fix them a little different.  Anytime I can eat an avocado I will.  And I have been making egg salad since I was a kid.

Deviled Egg Avocados?

I thought about making my Deviled Egg Avocados but I wanted to try something different.  I had seen an article not to long ago where the author made Avocado Egg Salad. I decided to give this a try. And I didn’t need mayo.

Green Eggs and Ham

Sorry, no ham in this recipe. But you will have green eggs. Don’t let that put you off. They still taste great.

In place of mayo I put my avocado in the blender with a little avocado oil (or olive oil) and some vinegar.  I pulsed it till out was nice and creamy.

Avocado Egg Salad

I considered using my mixing bowl to mix all the ingredients but I decided to just put everything into the blender. I have a 1 cooking dish rule on the truck.  The problem with this is the egg pieces become real small.

The ingredients and my method of making it are below.


  • 1 avocado
  • 4 hard boiled eggs
  • Chopped onion
  • Salt and pepper
  • Parsley
  • Oil and vinegar in avocado


Step 1

Cut eggs into small pieces

Step 2

Chop up onion

Step 3

Add spices

Step 4

Cut up avocado and put in blender or food processor. Add some avocado or light olive oil and a little vinegar. Pulse until creamy. Add to eggs and onions and mix.
